Add the blueberries into a saucepan. Turn to medium heat and begin to mash the berries with a fork. Once the berries are mostly mashed, stir in the chia seeds and lemon zest.
Allow the mixture to boil for 10 - 15 seconds, then remove from the heat.
Transfer into a glass jar and allow it to cool completely. Enjoy immediately or store in the fridge for up to 1 week.
