Blend the cottage cheese, milk, garlic, salt and pepper together until completely smooth. Taste and add a bit more salt or pepper if needed.
If not using right away, pour the contents of your blender into a small saucepan. Heat over medium low and whisk in the parmesan and Italian seasoning until completely smooth. Store for 3 - 4 days in the fridge until ready to use.
If using the sauce immediately, pour the contents of the blender over your pasta and stir in the parmesan and Italian seasoning. Toss until melted and smooth. If you want the dish to be more "saucy", stir in a splash of pasta water until you reach your desired consistency.
Serve warm with your favorite pasta, a crack of black pepper and your favorite fresh herbs.
