So rather than create a version of pad thai using quinoa (which, now that I'm thinking about it I very well might do...yum!), I figured I would try and reinvent the flavors of chicken pad thai and put them into quinoa burgers.
Whisk together soy sauce, fish sauce, lime juice, peanut butter and ginger and sriracha (if using).
Add ground chicken to a mixing bowl, add sauce and quinoa and mix until incorporated.
Form into four patties and set aside on a plate.
Preheat an oven-safe skillet over medium-high heat. Add burgers and sear on both sides, 1 - 2 mins per side. Transfer skillet to oven and bake until fully cooked, another 7 - 10 minutes.
Remove from oven and let rest for 5 minutes before serving.
