These chewy almond flour sugar cookies are a healthy sweet treat. They're grain-free, paleo, vegan and are even topped with a healthy chocolate frosting!
Preheat the oven to 350ºF and line a baking sheet with parchment paper.
In a large mixing bowl, whisk together the dry ingredients. Add flax egg, syrup and coconut oil to the bowl and mix together with a spatula until it forms a thick, pliable dough.
Roll pieces of dough in your hands to form tablespoon-sized balls. Place each ball on the baking sheet and repeat until no dough remains. Gently flatten with your hands and bake on the center rack for 10 minutes.
Remove from oven and allow to cool completely before frosting.
For the frosting, add all the ingredients into a blender or food processor and process until smooth. Taste and add more syrup if desired.
Once cooled, frost each cookie with 1 tablespoon of frosting and top with sprinkles.
