This amazing arugula and fig salad is a perfect late summer or early fall dish. Sweet, high in protein and tossed with a delicious creamy balsamic dressing.

Ingredients
for the salad:

cups
arugula

black mission figs
halved

cooked chickpeas

cup
shelled pistachios
1/4
cup
hemp seeds
for the vinaigrette:

tablespoons
balsamic vinegar

tablespoons
tahini
1
teaspoon
dijon mustard
Juice of 1 whole lemon

teaspoon
maple syrup
or honey
1/4
teaspoon
garlic powder
Salt & pepper to taste
Water if needed
Instructions
Add the salad ingredients to a large bowl.
In a small bowl, whisk together all the dressing ingredients until smooth. Add a splash or two of water as needed to make it a pourable consistency.
Pour dressing over the salad and toss to combine.
Serve immediately and enjoy!
