This strawberry coconut overnight quinoa is a healthy vegan breakfast that tastes like strawberry shortcake with hemp seeds, coconut milk, vanilla and fresh berries.

First, add 1/2 cup of cooked quinoa, 1/4 cup of chia seeds, 1/4 cup of hemp hearts, 1/2 teaspoon of vanilla powder or 1 teaspoon or vanilla extract, 2 dashes of stevia or use 1/4 cup of maple syrup, and a pinch of cinnamon to a large jar.

Next, pour 1 1/2 cup of coconut milk (or milk of choice) to the jar.

Stir all of the ingredients together.

Tighten lid and place in the fridge overnight. If the mixture feels a bit thick when you remove it from the fridge in the morning, whisk in 2 more tablespoons of coconut milk to loosen it up.

Remove from fridge and arrange in two jars with sliced strawberries. Serve immediately and enjoy!
