Wrap tofu in dish towel to drain. Then mix together the soy sauce, vinegar, gochujang, sesame oil, garlic, and maple syrup.

Chop the tofu into ½-inch thick pieces.

Toss tofu and sauce in a container or bag, seal, and refrigerate to marinate.

Mix the cornstarch and salt together and dip each side of the tofu into the mixture.
