A creamy vegan peppermint hot chocolate that is naturally sweetened and made in just 2 minutes. It's the perfect drink to warm you up on a chilly winter day!
We hit our first single-digit temperatures this past week and it reminded me how much I prefer warm, tropical climates. I honestly think I question my decision of living in the Northeast every single winter. And yet…I'm still here without any plans to leave!
Luckily, we have ways to stay warm when it's bitterly freezing outside. Things like big chunky sweaters, faux fur throws, and huge mugs of vegan peppermint hot chocolate always do the trick.
Last weekend I was feeling exceptionally festive, with my Christmas tree lights on and singing along to the Mariah Carey station on Pandora, that peppermint hot chocolate just seemed right. I've talked about making superfood hot chocolate in the past, but I'd never thought to add peppermint extract!
Of course, you could totally skip the vegan whipped cream and crushed candy canes on top, but I'd advise against it. Indulge a little, you deserve it 😉
I'm bringing you today's recipe in partnership with Simply Organic, to encourage you to take some time to enjoy the organic moments that happen throughout this somewhat hectic time of where. Whether it's a simple dinner with your girlfriends, a nighttime sledding party (if you're lucky enough to have snow), or just a quiet night at home with your partner.
Personally, I'm really trying to focus on being present in these moments. Too often we get swept up in the chaos and these things just slip past us. And then they're gone.
So let's do this: for the rest of this year, let's make a promise to make at least one date per week with those who matter most to us (friends, family, lovers, etc.), and do something that we don't normally do. I plan to go ice skating in Central Park, followed by a long stroll with a thermos of this peppermint hot cocoa to warm me up.

Now, it's time for hot cocoa!
This recipe is seriously so simple to make. You just need almond milk, hot water, some raw cacao powder, some vanilla powder, Simply Organic cinnamon, and Simply Organic peppermint flavor. For sweetness, I went with monk fruit extract (which you guys already know I love), but you could certainly use maple syrup or agave instead.
And then you just add it all to your blender, whizz it up for a few seconds and done.
You can obviously tell I jazzed mine up with whipped cream and peppermint candy, but again, optional. It's absolutely delicious as is!

We've got a Creamy Vegan Eggnog recipe that is made with a base of cashews and coconut milk, and is then spiced with Simply Organic's cinnamon, nutmeg, allspice and vanilla extract. It's soooo good, guys! I had it plain, as well as with a splash of whiskey, and just YUM!
The second is their Five Spice Chai Latte which is an aromatic and flavorful spin on the classic chai. I would have never thought to add five-spice powder, but I loved it. Five-spice has fennel and peppercorn in it, which add this little pop of flavor. Also, it's vegan which is awesome. This chai latte is definitely something I plan on enjoying all winter long!

Vegan Peppermint Hot Chocolate
Ingredients
- 2 cups almond milk
- 2 cups boiling water
- 3 tablespoons cacao powder
- 1 teaspoon vanilla
- 3/4 teaspoon peppermint extract
- 1/2 teaspoon cinnamon
- 1/4 teaspoon monk fruit extract or 2 - 3 tablespoons maple syrup/agave
- Toppings: vegan whipped cream and crushed peppermint candies
Instructions
- Add all ingredients to a high-powered blender. Blend on high until smooth and serve immediately.*
