This healthy and delicious Triple Berry Quinoa Salad is made in under 10 minutes, with only 7 ingredients and is naturally gluten-free and vegan!
Now that we're just days away from the official start of summer, we're brightening things up around with this fun triple berry quinoa salad!
It's full of flavor, simple to make and that maple lime dressing? Pure heaven!
It's the perfect dish to serve at a summer BBQ, make as a quick dessert, or you could even serve up a bowl for breakfast. It's got everything you need – protein, fiber, healthy carbohydrates and natural sweetness!
I first thought of this salad last summer, but other recipes kept taking its place in my editorial calendar. So I'm super excited to finally be sharing it, especially since I know you are just going to love it.
This recipe comes together in less than 10 minutes, uses just 7 ingredients and requires little to no prep. It's also one of those recipes that getsĀ better as it sits in the fridgeĀ because the berries and quinoa get extra time to marinate in the dressing, which means… it's awesome for meal prep!
As I was searching around for inspiration, I noticed that pretty much all the recipes out there use honey as the sweetener. While I do love honey, I wanted to a) keep this vegan and b) have just another excuse to use my favorite sweetener of all time.
MAPLE SYRUP.
I mean honestly, does it get better than maple syrup? It has such an amazing flavor; dark, robust, and caramel-y, and it goes well with everything. It gives this salad just the right amount of sweetness without it being too overpowering.
For even more flavor, I also added just a touch of ground ginger to the dressing which is an amazing herb for digestion and detoxification, but it also helps elevate the entire salad. Just a tiny hint of spice, but subtle enough that even ginger-phobsĀ (yes, just made that up) would never notice!
What you'll love about this salad is that you can also change up the fruit based on what is in season. Since it's almost summer, I'm making use of as many berries as I can, so it's a triple berry quinoa salad, butĀ when berries are no longer in season, I also think these combos would be delicious:
- Apple, Pear & Grapes
- Kiwis, Banana & Mango
- Pineapple, Apple & Banana
Or you can also just change up the berries based on what's available to you!

Maple Lime Triple Berry Salad
Ingredients
- 2 cups cooked red quinoa (from 1/2 cup uncooked)
- 1 cup sliced strawberries
- 1 cup blueberries
- 1 cup blackberries
- Juice of 2 limes
- 3 tablespoons maple syrup
- 1/2 teaspoon ground ginger
Instructions
- Add quinoa and berries to a large mixing bowl and set aside.
- In a separate bowl, whisk together lime juice, syrup and ginger. Pour dressing over the salad and toss to combine.
- Either serve immediately (with lime zest to garnish) or store in the fridge for up to 3 days.
