  • Cottage cheese – The extra fat in whole milk cottage cheese will keep you feeling fuller longer, but you can also use low fat cottage cheese if you prefer. 
  • Vanilla or unflavored protein powder – You can substitute this with a tablespoon of oat flour if you’re simply looking for a sweet treat and don’t want or need the extra protein.
  • Maple syrup – Or another liquid sweetener such as agave or honey.
  • Cashew butter
  • Sea salt – A little bit of salt adds balance.
  • Vanilla extract

  • Mini chocolate chips 

Yes, you can easily make this recipe nut-free by using sunflower seed butter instead of the cashew butter and oat flour in place of the almond flour.

  • Blend. Combine all of the ingredients except the almond flour and chocolate chips in a food processor or blender and blend until smooth. 
  • Add the almond flour. Transfer the cottage cheese mixture into a mixing bowl and stir in the almond flour.
  • Finish. Stir in the chocolate chips and either eat right away or chill. 

Tips for Success

  • Blend the cottage cheese mixture until completely smooth. This will ensure a creamy texture, without any of those cottage cheese curds in your cookie dough.
  • Adjust the amount of almond flour as needed. Depending on the moisture content of your cottage cheese, you may need more or less almond flour to achieve your desired consistency.
  • Chill the dough if you have time. This allows the flavors to meld together and the almond flour to absorb more moisture, resulting in a better texture.

  • Use chocolate protein powder or another variety for flavored cottage cheese cookie dough. The options are endless!
  • Swap out the cashew butter for another nut or seed butter of your choice.

  • Add the cottage cheese, protein powder, maple syrup, cashew butter, salt and vanilla extract to a food processor or blender. Blend until smooth. You should have a creamy mixture without any lumps.
  • Transfer the blended cottage cheese mixture into a mixing bowl. Add the almond flour and stir until combined. Because cottage cheese moisture content can vary you may need more almond flour to achieve the consistency you like.
  • Stir in chocolate chips or any other add-ins you'd like (see notes).
  • You can eat it right away, I recommend chilling the dough for 30 minutes to an hour before serving. Chilling will allow the almond flour to absorb more moisture and result in a better texture. Store in an airtight container in the fridge for up to 4 days.

Notes

  • Optional add-ins: raisins or dried cranberries, dried apricots, chopped nuts, chopped chocolate.
  • Add 3 tablespoons cocoa powder while blending the cheese to get a chocolate cookie dough.
